Are you excited? I know I am excited! Season 5 of The Walking Dead premieres this weekend and I could not be more excited! What better way to celebrate and watch then with some super fun and yummy Zombie Bait! Plus, I just found out that season 6 has been given the green light, so that means at least one more awesome season to look forward to. Anyone else going to cry if the show ever ends? I know I will. Extra Chunky Chili Recipe!
Go figure, it has been cold and rainy here for 12 days straight… TWELVE DAYS! So of course that means it is chili weather and this Extra Chunky Chili Recipe is both filling and yummy! Of course, I made it and now it is sunny and warm, but I am not complaining! I like a hearty chili, the kind you can eat with a fork. I could just never get on board with a soupy chili, that is not chili…it’s soup! There is just enough liquid for the Oyster crackers to sop up…. Anyone else love Oyster crackers as much as I do? I could eat them straight out the bag…yum! You can add as much heat to this recipe as you want, I like mine with a little kick. If you like a more mild heat, don’t add as much jalapeno. You can also throw this into a slow cooker and let it simmer all day!
One Pot Beef Stroganoff
Is anyone else exhausted with school back in full swing again? I thought I would have more time once the kiddos went back to school, but it seems to be just the opposite! So, I have been on a mission to make meal time as easy as possible and this One Pot Beef Stroganoff is perfect. This One Pot Beef Stroganoff recipe takes about 20 minutes to throw together and uses one pot, because lets face it, no one wants to do a ton of dishes after a long day! Plus, with the weather cooling down, there is just something that screams comfort food with Beef Stroganoff. It is funny because I hated anything to do with mushrooms when I was a child and now I love them. I think it was more of a texture thing more than anything else. Even my kids love this dish. If you prefer, you can always use ground beef, but I prefer strip steak with mine.
A Fun New Recipe Experience!
I live in a small, rural area with not much around. We have a large city near by, but sometimes I just need to run to the store for a few items. That is why I am so grateful that there is a Food Lion less than 5 minutes from me. It is located in the middle of no where, which works out great for me…lol Our store just finished a major remodel, and it is now my favorite place to shop. I have been going to the same store for over 6 years and the employees know me and are always super helpful. So, I was super excited when I was asked to submit a recipe to the new Food Lion recipe portal!
I opted to make some super yummy No Bake Strawberry Lemonade Cheesecake Bars for the site, which are both super easy and super yummy! They are perfect for the hot summer days we are having here in the south as well!
I found that it was really easy to submit my recipe to the site, they give you step by step instructions on how to do it, and it takes only a few minutes! This is great for those who do not blog, but still want to share their amazing recipes that they come up with. You can create a recipe on the portal and then you will have a link to the direct recipe emailed to you once it is approved. You can then share it with your friends and family and to your social media to show off your mad culinary skills!

Fall of the Bone Ribs Recipe!
I am sorry that I have been so absent this week, but I am still in the middle of a renovation and it has taken everything I have to try to get it all done. We still have to finish raising the floors and lay over 1300 sq feet for flooring, not to mention a few other large tasks as well. This means that I have been living in a construction zone for over 2 weeks, and today I just needed real food. It all started with some things that I picked up at my local Walmart this week. I love this time of year when corn on the cob is fresh and cheap, it is a family favorite so I knew I had to grab a few. I also picked up some Marketside bagged salad, because it is easy to throw together and no extra work involved. Then I spotted the BBQ sauce and I knew what I wanted to make… RIBS! Not just any ribs though, fall of the bone ribs coated in BBQ sauce. You know the kind… where after you are done eating them you have to take a shower because you are just covered in BBQ. So I gathered everything I needed and headed home to pull out my trusty crock pot! The first thing you will need to do for this recipe is cut your ribs into portions so that they will fit into a crock pot (if you don’t have a crock pot, you can use a large pot on the stove). Then, slather them in BBQ Sauce and place them in the crock pot! I am loving the new Kraft sauces because they contain no high fructose corn syrup and the new recipe has 8 flavors to choose from! Add in 1 cup of beef broth and cook on low for 6-8 hours. Then just wait… The longer you let them cook, the more tender they will be. Once dinner time rolls around, pull them out of the crock pot and get the grill ready! Give them another good helping of BBQ sauce and toss them on the grill. There is just something about the char of BBQ sauce that I love. Cook on the grill until BBQ sauce has caramelized and get ready to serve! I served mine up with a fresh salad and corn on the cob. When we BBQ I love using an over sized cutting board to serve the meat on. It makes it easy for everyone to dive right in!

Funfetti Cookies! Only 3 Ingredients!
I have a major sweet tooth, but sometimes I just do not feel like going into full on cookie mode. When I want a cookie, I do not always want to get together a bunch of ingredients or my stand mixer. These Funfetti cookies are great for when a sweet craving hits, they are simple to make with only 3 ingredients, and take about 20 minutes to make from bowl to mouth! If you are not a Funfetti fan, you can easily swap out any of your favorite flavor cake mixes! For the holidays, I made this recipe with lemon cake mix and rolled the dough into powdered sugar before baking, and they were amazing! These cookies are a great combination of a cookie and cake! The secret to the perfect Funfetti cookie is to not over mix the batter. Just mix it until just combined, and you will have a nice fluffy and moist cookie!

Fruit and Yogurt Parfait
With summer in full swing and starting a complete home remodel, our days are busy. I have been struggling to keep up with the kids, school (less than 6 weeks left till I graduate), work and the renovations. So, I have been trying to find quick and easy ways to feed the family that don’t require a ton of work but are still good. This easy Fruit and Yogurt Parfait is perfect because I can throw it together in a matter of minutes, plus I can use up some of the berries that are over flowing from our garden. I am a huge yogurt fan, so I was super excited to learn that Quaker Real Medleys now have a new granola and yogurt blend! With the Quaker® Real Medleys® Yogurt Cups all I have to do is add some cold milk, stir and serve! They come in a variety of flavors and include fruit and granola! I mean their tag line says it all, “Crunchy. Cool. Yum.”! My family already loves all of the other Quaker products so I knew I needed to give these a try! You can find them in the cereal aisle next to all of your other favorite Quaker products at your local Walmart! Yes, a yogurt product in the cereal aisle! They are the first shelf-stable convergence of granola, fruit and yogurt – all in a single serve cup! This is especially great because my poor Hubby usually eats his breakfast at work, so he can easily grab a cup and take with him in the mornings! Since I have an over abundance of berries, I decided to add the Quaker Real Medleys Granola and Yogurt blend to my morning helping of fresh berries. I just added a layer of fruit, then a layer of yogurt and continued to the top! Since I used the Strawberry granola and yogurt blend, I opted to just top it all off with some fresh strawberries…. Twizzler Travel Mix | Easy Travel Food!
One thing that I absolutely LOVE about living in North Carolina is the location. We can drive an hour one way and be at the mountains or head in another direction and be at the beach. Because of our awesome location we love to travel when ever we can during the summer, which can be tricky sometimes. Depending on the time of year, we may head as far south as Myrtle Beach, which is about a 3 hour drive. 3 hours may not seem like a long time, but when you have kiddos in the car, it can be a lifetime! So, I am always on the hunt to grab snacks that will keep the kiddos occupied and happy. We love trail mix when we go hiking, but chocolate + heat + kids does not make a great combination! So while I was at my local Walmart hunting for something new, and not so messy, I decided I would make Twizzler Travel Mix for our upcoming trip! I headed over to the candy aisle and grabbed up some Twizzlers Twists and Twizzlers Pull N Peels because they fit the bill for what I wanted. Something sweet, that would not melt in the heat and the Twizzlers Pull N Peels are always fun to pull apart! I also picked up some of the kiddos favorite snacks like pretzels, graham crackers and marshmallows. We are going on vacation, it is okay to splurge on sweets every once in a while. To make the travel mix all I needed to do was get it all together and break up everything into bite size pieces. Super easy! Then I tossed everything in a bowl to mix it all together! The great thing is, I can always change this mix up by adding peanuts or cookies or any other munchies! The best part? The kiddos loved it! So much so, that it may not last the entire trip!

Citrus Honey Vinaigrette
We have only been on Summer break for about 2 weeks now, and I am already tired! Between the kiddos, school (I don’t get a summer break) and working full time from home, the last thing on my mind is dinner. Plus, with temperatures reaching 100+ degrees each day, the oven is my mortal enemy right now. So, to keep the family happy and fed, it was time to spice up some of my favorite meals. I LOVE salads, the fresh veggies the crisp greens…so yum! Nothing is more perfect for dinner. But, if I fed the family a plate full of leaves, I am pretty sure they would riot. That is why I am loving the Birds Eye Steamfresh® Protein Blends and the Tyson® Grilled & Ready® Chicken Breast Fillets! These two items can be a meal just on their own. Pop them in the microwave and serve them up and be done with it. To liven up an already yummy summer salad I decided to make Citrus Honey Vinaigrette to go along with it. The vinaigrette takes just a few minutes to make and gives the meal a little bit of zing that is perfect for summer! You only need some basic ingredients to whip this up, and you most likely have everything on hand already! Just pour all of your ingredients into a bowl and whisk until combined! Easy Peasy! To serve, I just laid down a bed of my favorite salad greens, heated up some the Italian Style Birds Eye Steamfresh® Protein Blends and few Tyson® Grilled & Ready® Chicken Breast Fillets in the microwave and served it together in a bowl. And, of course, I added a few fresh strawberries to give it a little sweetness.
This has become my go to salad for the summer. The Tyson Chicken is 100% all natural and made with all white meat, and the Birds Eye Veggies give the meal an extra boost of protein, so everyone is happy!
One thing that I love about this meal is that I can find everything that I need right in the frozen food aisle of my local Walmart. And, with the different options of Birds Eye Steamfresh® Protein Blends, I can change it up a bit too!
