If you follow me on Instagram, you know we are already in full Summer mode here. The temperatures have already hit 100 degrees so keeping cool is high on my priority list. With the kids almost done with school, I decided it was time to come up with some kid friendly treats to keep them cool while they are outside playing. This JELL-O Slushy is just the thing! It stay frozen a lot longer than a traditional Slushy and the flavor combos are endless. Today I made a Strawberry Lemonade JELL-O Slushy  and a Blue Raspberry Slushy! Both were amazing, and when I combined the two flavors I had an instant hit! JELL-O Slushy Recipe The red and blue JELL-O Slushy will be perfect for the upcoming 4th of July Holiday, super fun and festive! But, as I said, any flavor combos will work. I may have to make a Watermelon flavor soon!
JELL-O Slushy Recipe For the Strawberry Lemonade JELL-O Slushy, I used Strawberry Lemonade with gave it just the right amount of tart to counteract the sweetness of the JELL-O. The Blue Raspberry I used a Lemon-Lime Soda. As long as the flavors mix well, the combos are really endless!

  • 1 Pack of JELL-O pick your favorite
  • 1 Cup Boiling Water
  • 2 tbsp Fresh Lemon Juice
  • 1 Cup Juice or Soda one that coordinates with the JELL-O works best
Course Frozen Drink
Prep Time 5 minutes
Cook Time 240 minutes

Ingredients
  • 1 Pack of JELL-O pick your favorite
  • 1 Cup Boiling Water
  • 2 tbsp Fresh Lemon Juice
  • 1 Cup Juice or Soda one that coordinates with the JELL-O works best
JELL-O Slushy Recipe
Instructions
  1. Combine boiling water and JELL-O and mix until dissolved completely.
  2. Mix in lemon juice and juice/soda (if using Soda, it will fizz a bit).
  3. Pour into a baking dish and freeze for 3-4 hours, or until hard.
  4. Remove from freezer 5 min before serving and use a spoon or ice cream scoop to scrape the slushy out.
  5. Add a little more soda/juice to glass before serving.
  6. Enjoy!

I have been a dip and salsa kick lately. It has to be the warm weather, drawing me into the summer fun and hopes of wearing flip flops on the beach. Even though I can’t get to the beach, does not mean that I can’t celebrate summer a little early, right? This Guacomole Salsa will get you into the summer mood! A combination of thick and creamy Guacamole with a hint of salsa, your friends and family are sure to be begging you for this recipe! Guacamole Salsa With just a few simple ingredients, the only tool you will need for this recipe is a blender or food processor! Guacamole Salsa If you like your salsa or guacamole with a little kick, you can add more jalapeños, or none at all, it is up to you! Guacamole Salsa I like dips and salsas because I have some picky eaters in my house. But, if they have something they can dip their food into it, they seem to eat everything on their plate. I guess they like the idea of “playing” with their food, which they probably got from me. Taquitos and Tacos are the perfect dipping tool for this Guacamole Salsa! You can find a ton of different options in beef or chicken at Walmart! I am loving the Beef and Cheese Tacos from Delimex! Delimex Mexican dishes are the perfect food to celebrate Cinco de Mayo, check out some other yummy recipes here!

  • 1 lb. tomatillos
  • 1 jalapeno pepper
  • 1/3 cup fresh cilantro
  • 1/3 cup onion
  • 1 garlic clove
  • 1 avocado
  • 1 tsp. salt

Prep Time 5 minutes
Cook Time 5 minutes

  • 1 lb. tomatillos
  • 1 jalapeno pepper
  • 1/3 cup fresh cilantro
  • 1/3 cup onion
  • 1 garlic clove
  • 1 avocado
  • 1 tsp. salt
Guacamole Salsa
Instructions
  1. Place everything into a blender of food processor.
  2. Pulse until fully combined and desired consistency is reached.
  3. Store leftovers in an airtight container in the refrigerator for up to 1 week.

My family loves Mexican food and with Cinco De Mayo right around the corner I figured it was time to try my hand at recreating one of my favorite dip recipes. This easy Queso Blanco Dip can be done on the stove top, or in a slow cooker which is great for those set it and forget it kind of days. Easy Queso Blanco Dip We have a great Mexican restaurant in our area, and every time we go, Queso Blanco is a must have at our table. To the point where the waiters no longer ask us, they just bring it to the table. But, with our families schedules being so busy lately, we have not had many opportunities to visit our favorite restaurant. So, I decided that it was time to make my own version of this creamy, cheesy dip! Easy Queso Blanco Dip All you need is a few basic ingredients, and you will be well on your way to cheesy, dipping gold! Easy Queso Blanco Dip I like to throw everything together and put it in the slow cooker, but on those nights where I am craving it, I just throw it into a sauce pot and it is ready in 5 minutes!

  • 1 8 oz package cream cheese
  • 1 cup Pepper Jack Cheese shredded

Easy Queso Blanco Dip
Instructions
  1. Place all of the ingredients in a sauce pot and heat over medium low heat. Stir occasionally.
  2. Once cheese has started to melt, reduce to low and stir until creamy and smooth.
  3. For the slow cooker, simply place everything in the slow cooker and set to low.
  4. If you like a little more heat, add in 1 diced Jalapeño.

Something about Salsa just screams summer to me! With the weather in the 80’s, it might as well all ready be summer. Everything is blooming, and I will soon have tons of fresh strawberries, blueberries and blackberries. Although none of my veggies in the garden have produced, the farmers market down the street has some nice fresh veggies already!

So, I decided that today was the day to make this Easy Chunky Blender Salsa! I love salsa, and when I can throw everything together in one container to make it, it is a plus!

  • 1 lb tomatoes
  • 1/4 cup white onion
  • 2 Jalapenos optional (remove the seeds if you want less heat)
  • 1 garlic clove peeled
  • 2 teaspoons of cumin
  • 1 cup of fresh cilantro
  • 1 1/2 teaspoons of kosher salt

  • 1 lb tomatoes

I have flowers on the brain! My Instagram is full of all the beautiful flowers that are starting to bloom in the yard! These DIY flower pops are perfect to celebrate all of those beautiful colors popping out of the ground! They are simple and only take a few things to make! DIY Flower Pops

All you need for these DIY flower pops is some Life Saver candies in different colors, (I ended up buying a few bags to ensure that I had enough of each color I wanted to use), some suckers sticks and a lined baking sheet! This is a perfect spring craft for those rainy days! The kiddos loved designing their own color schemes and watching them melt into a yummy and fun treat!

We have all been there, that dreaded feeling that you forgot something… something big. This was my case this week when I failed to remember that the kiddos start Spring break this week, which means Spring parties. I don’t know what it is, but I can never go to a party empty handed. Probably because my friends and family know what I do for a living, so they expect something amazing. Well, this Jalapeno Popper Dip is just that…. AMAZING!

You can make it the day before and pop it in the oven to heat it up the day of your party. Or you can make and devour it all by yourself, it is up to you. With just a little bit of kick from the jalapeño to the bacony goodness, it is sure to be a hit.

This dip is best served with crackers to spred it on. I Serve it with some RITZ® crackers (I used the bacon flavor RITZ® crackers) and watch it disappear!

There is little work involved with this recipe, it is just a matter of grabbing the ingredients…..

This Jalapeno Popper Dip is creamy and cheesy and includes on of my favorite foods….. BACON. Do take note though, this makes a lot of dip, I used a 1qt baking dish and it filled it to the brim. If you are having a smaller get together, you can always half the recipe. But, this stuff is great the next day too, just reheat and enjoy some more!

You can pick up RITZ® crackers at your local Walmart in the cookie and cracker aisle. There are so many flavor choices, my favorite is of course the Bacon flavored, but I am also loving the Honey Wheat as well.

  • 2 8 oz packages of cream cheese softened
  • 1 Cup mayonnaise
  • 8 slices of bacon cooked, drained and chopped
  • 5 in Jalapenos seeded and diced (for more heat leavea few seeds)
  • 1 Cup + 1/2 Cup cheddar cheese shredded
  • 1/2 Cup +1/4 Cup mozzarella cheese shredded
  • 2 TBSP Dry ranch seasoning
Course Side Dish / Dip
Prep Time 5 minutes
Cook Time 20 minutes

  2. Combine 1 cup cheddar cheese, 1/2 cup mozzarella cheese, cream cheese, mayonnaise, bacon, ranch seasoning and jalapenos in a large mixing bowl.
  3. Mix until well combined.
  4. Transfer into a 1 qt baking dish and cover with remaining cheese.
  5. Bake for 20-30 minutes or until the edges are golden brown and bubbly.

Where has the year gone? I can not believe that the Holiday season is upon us, which of course means crazy schedules, family get togethers and running around to find that elusive “perfect gift” for that not so easy to shop for relative. I do not know about you, but just thinking about it makes me tired. It is usually around 3pm or so that my energy starts to lag and my stomach starts to growl, most of the time because I forget to eat lunch. So I love having snacks in the house that I can grab to give me that extra little boost to get me through the rest of the day. These Reese’s Peanut Butter & Chocolate Energy Bites do just the trick. Just one or two and they fill me up and hold me over until dinner time and give me that extra little kick to get me through the rest of the day. So off to Walmart I went to hunt down this little jar of goodness. Thankfully I did not have to run around the store like a crazed loon and was able to find right in the peanut butter isle, nestled comfortability on the shelf, waiting for me. All you need is a few ingredients and a blender or food processor to make them! Reese's Peanut Butter & Chocolate Energy Bites Simply grab up all of your ingredients, and any extras you want to add, and place it all in a food processor and pulse until everything is well combined! Simple right? Reese's Peanut Butter & Chocolate Energy Bites After your ingredients are well combined, simply roll into 1 inch or bite sized balls. Any extras can be stored in an air tight container in the refrigerator for up to a week.

  • 3 tbsp Flax Seeds
  • 3 tsp vanilla extract
  • 1-2 tsp Water as needed
Course Snack
Prep Time 5 minutes

Ingredients
  • 1 1/4 Cups Old Fashioned Oats
  • 1/2 Cup Reese's Spreads
  • 1/2 Cup Shredded Coconut Unsweetened
  • 1/2 Cup Honey
  • 3 tbsp Flax Seeds
  • 3 tsp vanilla extract
  • 1-2 tsp Water as needed
Reese's Peanut Butter & Chocolate Energy Bites
Instructions
  1. Add all ingredients with the exception of the water to a food processor or blender and pulse until combined.
  2. If mixture appears dry and hard to form, add in 1 tsp of water at a time until mix holds it shape when molded.
  3. Roll into 1 inch size balls and place in refrigerator for 15 minutes to set.
  4. Store left overs in an air tight container in the refrigerator for up to 1 week.

YAY! It is almost summer, and that means warm weather and fresh fruit from the garden! My kiddo’s love popsicles, but I hate all of the stuff that they put into them. And lets face it, nothing beats a nice cold popsicle on a hot summer day. These  Fruit and Yogurt Pops are simple to make, and good for you too!

Fruit and Yogurt Pops!

Triple Berry Fruit and Yogurt Pops!
Course Dessert
Prep Time 10 minutes
Cook Time 300 minutes

-6 Popsicles
Ingredients
  • 1/2 Cup Strawberries
  • 1/2 Cup Blue Berries
  • 1/2 Cup Blackberries
  • 1 Cup Vanilla Greek Yogurt Divided
Course Dessert
Prep Time 10 minutes
Cook Time 300 minutes

-6 Popsicles
Ingredients
  • 1/2 Cup Strawberries
  • 1/2 Cup Blue Berries
  • 1/2 Cup Blackberries
  • 1 Cup Vanilla Greek Yogurt Divided
Instructions
  1. Start by pureeing each fruit separately.
  2. Mix in 1/3 Cup of greek yogurt into each fruit.
  3. Pour into popsicle mold or small cups and freeze for 5-6 hours.
