Go figure, it has been cold and rainy here for 12 days straight… TWELVE DAYS! So of course that means it is chili weather and this Extra Chunky Chili Recipe is both filling and yummy! Of course, I made it and now it is sunny and warm, but I am not complaining!   Extra Chunky Chili Recipe! I like a hearty chili, the kind you can eat with a fork. I could just never get on board with a soupy chili, that is not chili…it’s soup! There is just enough liquid for the Oyster crackers to sop up…. Anyone else love Oyster crackers as much as I do? I could eat them straight out the bag…yum! Extra Chunky Chili Recipe! You can add as much heat to this recipe as you want, I like mine with a little kick. If you like a more mild heat, don’t add as much jalapeno. You can also throw this into a slow cooker and let it simmer all day!

  • 1 Large Jalapeno chopped (remove the seeds for less heat)
  • 2 tsp Chili Powder
  • 1 tsp ground cumin
  • 1 tsp Worcestershire Sauce
  • 1 tsp pepper
  • 1 tsp salt

  3. The longer you let simmer, the better this recipe gets!
  4. Top with your favorite chili add ons like cheese, onion... or of course, Oyster crackers.

Is anyone else exhausted with school back in full swing again? I thought I would have more time once the kiddos went back to school, but it seems to be just the opposite! So, I have been on a mission to make meal time as easy as possible and this One Pot Beef Stroganoff is perfect. One Pot Beef Stroganoff This One Pot Beef Stroganoff recipe takes about 20 minutes to throw together and uses one pot, because lets face it, no one wants to do a ton of dishes after a long day! One Pot Beef Stroganoff Plus, with the weather cooling down, there is just something that screams comfort food with Beef Stroganoff. It is funny because I hated anything to do with mushrooms when I was a child and now I love them. I think it was more of a texture thing more than anything else. Even my kids love this dish.   • 1/2 cup sour cream
  • 8 oz egg noodles

  1. In a large skillet, heat butter and sauté onions and garlic until translucent.
  2. Add in beef and cook over medium heat until medium rare.
  3. Add in mushrooms, paprika, beef broth and noodles to skillet and bring to a boil. Boil for 2 minutes and reduce heat to low.
  4. Continue cooking until noodles are tender.
  5. Stir in sour cream and serve!

Summer is here Ya’ll! Living in the South means I can pretty much grill year round, which I love because it is less clean up and nothing really beats a meal grilled. These Sweet and Spicy Chicken Kabobs have become an instant family favorite in our home! I love the way veggies get that char and become a little crispy around the edges… so yum! If you like a little kick to your food, this recipe is for you! Sweet and Spicy Chicken Kabobs! I used the marinade for our chicken, but it is pretty darn awesome on steak as well. Hubby uses it as a dipping sauce for his french fries… It is THAT good! It has a major kick, but it is not an overwhelming spicy. IMG_7366 For this fun summer recipe, you will only need a few ingredients and clean up is a breeze! That is the one thing I LOVE about grilling is that there are less dishes. I like to use a baking sheet covered in foil to carry the food out to the grill, when the food is almost done cooking, I take the baking sheet in and change out the foil to carry it all back. Sweet and Spicy Chicken Kabobs! For this recipe I used the El Yucateco Red Habanero Hot Sauce, but you can substitute with theEl Yucateco Chipotle Hot Sauce, which I found at my local Lowes Foods. If you are craving a little more heat, you can always go bold with the El Yucateco Green Habanero Hot Sauce that packs a little bit more of a punch than the Red Hot Sauce! I absolutely love the El Yucateco Chipotle Hot Sauce and use it straight from the bottle on my steak. 20150603_090443

Sweet and Spicy Chicken Kabobs!
Instructions
  1. In a blender or food processor combine all ingredients for the marinade and pulse until combined.
  2. Reserve 1/2 Cup for basting.
  3. In a large bowl or sealable bag combine chicken and remaining marinade. Refrigerate for 1 hour.
  4. For Kabobs add chicken, onion and green peppers to skewers and grill. Use the reserve of marinade to baste the chicken and veggies as needed.

I came to the realization this week that 90% of the meat in my freezer is chicken…. Lots and lots of chicken. I don’t know about you, but my family gets food bored, so the same old chicken recipes over and over again will most likely cause a riot in my home. So, I knew it was time to mix things up a bit. We love Mexican food in our home, and we usually give it a cultural twist because my hubby is Hispanic and I am Polish/German. This week I put some of that Zaycon chicken to work making this simple Chicken Enchilada Casserole! Chicken Enchilada Casserole This recipe is super easy, and will sure to be a hit! I also love it because it makes a great freezer meal! Put it all together and freeze it for one of those nights where you just do not feeling like cooking! To make all you do is take a 9×13 baking dish and place a layer of corn tortillas down…. Chicken Enchilada Casserole Layer on your cooked chicken… Chicken Enchilada Casserole Top with spanish rice…. Chicken Enchilada Casserole And some yummy cheese… Chicken Enchilada Casserole Top off with another layer of corn tortillas, cheese and Enchilada sauce…. Chicken Enchilada Casserole And bake!   • 2 Cups Mexican blend cheese
  • Rice:
  • 1 Cup White Rice
  • 2 cups chicken broth
  • 1 Tablespoon butter
  • 1/2 cup salsa
  • 1 teaspoon garlic salt
  • 1/2 teaspoon ground cumin

Instructions
  1. Preheat oven to 350 degrees.
  2. In a skillet saute chicken, pepper and garlic. Once chicken is cooked through, add in cilantro and remove from heat.
  3. While chicken is cooking, combine all of the rice ingredients into a medium, non-stick skillet. Bring to a boil, then cover and reduce heat to low. Simmer for 25 minutes.
  4. Once chicken and rice are cooked, cover your baking dish with a layer of corn tortillas, overlapping a bit. Layer on chicken, rice and 1 cup cheese.
  5. Cover with another layer of corn tortillas and cheese. Pour over enchilada sauce and bake for 30 minutes, uncovered, or until cheese is melted and bubbly around the edges.

I love Chicken Cordon Bleu, but absolutely hate the work that goes into making them. Call me lazy, but I want the flavor of it, without all of the work. That is why I love this Chicken Cordon Bleu Casserole recipe, the yummy flavor without all of the hassle. Since I have a ton of ham leftover from another dinner, I decided this would be the perfect meal to use up those leftovers. Plus, I have a ton of Zaycon chicken left in my freezer, so I kill two birds with one stone. You can use leftover ham, or left over chicken, or both or neither. All you need to do is cut up some chicken breast, or if using left over chicken, shred it…. Chicken Cordon Bleu Casserole Cover the chicken up in some yummy ham…. Chicken Cordon Bleu Casserole Cover up the ham in some shredded swiss cheese, or you can use sliced if you prefer…. Chicken Cordon Bleu Casserole Create a quick béchamel sauce, which sounds fancy, but is really easy and pour it on…. Chicken Cordon Bleu Casserole Then, finally top with a bread crumb topping and bake! Chicken Cordon Bleu Casserole Baking times will differ depending on if you are using raw chicken verses leftover chicken, but the results are the same. A juicy chicken with a creamy and cheesy sauce. Another note is you want to be mindful of the amount of salt you use. If your ham is rather salty on its own, you will not want to add as much salt to the sauce. Chicken Cordon Bleu Casserole!   • For the sauce:

  • 4 tablespoons flour
  • 3 1/4 cups milk
  • 1 tablespoon Dijon Mustard
  • 1/4 teaspoon pepper
  • salt to taste
  • For the topping:
  • 6 tbsp Unsalted Butter
  • 1 1/2 cups Bread Crumbs
  • Salt and Pepper to taste

Prep Time 10 minutes
Cook Time 45 minutes

Instructions
  1. Preheat oven to 350 degrees and grease or butter a 9- x 13-inch baking dish. Set aside.
  2. Layer the chicken on the bottom of the dish and cover with ham and then cheese.
  3. Sauce:
  4. In a large sauce pan over medium heat, melt butter completely.
  5. Add in flour and whisk until smooth. Do not over cook, if the roux is starting to darken, remove from heat.
  6. Add in milk and continue to whisk until sauce is smooth. Stir in dijon mustard, salt and pepper and bring to a boil and then remove from heat.
  7. Pour sauce over the casserole, ensuring it gets into the corners and covers the entire bottom the dish.
  8. Topping:
  9. Melt butter over medium heat and stir in bread crumbs and salt and pepper.
  10. Sprinkle over the casserole until completely covered.
  11. Bake, uncovered, for 45 minutes or the internal temperature of the chicken reaches 165 degrees
  12. Allow to cool for 5 minutes before serving.

This month I was offered the chance to try out Zaycon Chicken for the first time, so of course I jumped on the opportunity! I have seen and heard of Zaycon so I was super excited to finally be getting some myself. I knew of the process of getting my case of chicken from browsing their website so many times in the past. I just always seemed to miss the order dates because of other things going on in my life. This time though…. This time I cleared my schedule and mad it a priority to make sure I was able to pick up my case. As I was dreaming of chicken the few days prior to picking up my case, I decided the first meal I was going to make was this super yummy Bacon Ranch Chicken. I knew that Zaycon Foods sold chicken and other types of meats, but did you know that they also sold bacon? I mean bacon by the case!!! The case, people!!!!! I already have plans on purchasing that when it comes to my area….Mmmmm bacon. IMG_0458 I love the fact that the process of getting my case of chicken was soooo simple! You order online, choose your pickup location, pay, and then on the delivery you simply drive up and they put it right in your car for you! You never even have to get out, I did of course because I wanted to snap some quick photos. Rudy, the delivery man, was super nice and had no problems of me grabbing a few quick photos. He was also able to answer all of my questions. Did you know that Zaycon Foods provides fresh, high quality product, straight from our suppliers, cutting out the middle man and that they only sell in bulk? This means that you can get a great quality of product at a lower rate. My pickup site was a local church in my area, and as I was snapping photos, the director told me about their Facebook group where they come together and purchase cases to split between families. She then laughed because no one ever wants to split the chicken because they all want it for themselves. Zaycon Foods   Ok, now back to that Bacon Ranch Chicken I mentioned earlier. I wanted something for dinner that was quick, easy and would make my family happy. Since the Zaycon freash chicken breast are fairly large (I’m talking bigger than my hand large), I decided to cut each breast into two portions. After that it is just a matter of adding a few seasonings, bacon and cream cheese to the mix… Oh and bonus, this meal only dirtied up one skillet! Once you have your chicken portioned out, sandwich it between some plastic wrap and use a meat tenderizer (or large spoon) to thin the chicken into about 1 inch thick. In a small bowl, combine the cream cheese and ranch seasoning. Bacon Ranch Chicken Recipe Spread cream cheese evenly over each portion of chicken, leaving a little room towards the edges to roll. Roll each portion up and tightly wrap with bacon. Place each portion of Zaycon chicken in a hot skillet with the seam of the bacon facing down. This will help keep the bacon in place without having to use toothpicks. Bacon Ranch Chicken Recipe Sear each side of the bacon until light golden brown ( about 2 minutes on each side). Place skillet into a preheat oven at 400 degrees and bake until chicken reaches an internal temperature of 165 degrees. This time may vary on the thickness of your chicken. Bacon Ranch Chicken Recipe After the chicken was done cooking, I removed it from the skillet and used the drippings to brown some thinly sliced potatoes. Let me tell you, this is probably my families new favorite meal. It is simple and easy to make and chicken comes out moist and juicy…. Plus… Bacon… Duh! What about you?   5. Place chicken, with the bacon seam down, in a hot oven safe skillet. Sear each side until bacon is light golden brown, but not completely cooked through.
  6. Place entire skillet into a preheated oven of 400 degrees.
  7. Bake until internal temperature reaches 165 degrees, about 15-20 minutes, depending on the size and thickness of the chicken breast.

What a crazy week this has been! Let me start by saying, I moved away from Michigan because I hated the winters. Now, here in North Carolina we have ice and snow and the temperature is dropping to the single digits this week…. SINGLE digits! I think it may be time to move further south… Since everything has shut down (which I find funny), I was in a bind on what to make for dinner. After raiding the pantry and fridge I committed to making a super yummy Chicken Carbonara Recipe! Nothing cheers me up like dinner that includes bacon! Bacon fixes everything, in my opinion… and chocolate… chocolate too! Chicken Carbonara Recipe! This recipe is super easy to make, and great for if you have any left over chicken from a previous meal… If not, it is still easy to make. And did I mention bacon?

  2. Remove bacon from saucepan and drain excess drippings from the saucepan, reserving 1 tbsp.
  3. Cook onion and garlic in bacon fat over medium heat about 3 minutes, stirring frequently, unitl onions become opaque. Stir in spaghetti, chicken, cheese and whipping cream. Cook, stirring occasionally, until heated through.
  4. Toss in bacon and serve!

WOW! Where did summer go? If you haven’t noticed, I have been a bit MIA these past few weeks (if you haven’t noticed, it’s ok, I still love you). I have been super busy with getting the kiddos ready for school, and we were actually able to go on a mini vacation, but that is another post. The temperatures are still in the high 90’s here in North Carolina, but I have fall and winter on the mind. I am sick of the heat to tell you the truth. This Swedish Meatballs with Mushroom Cream Sauce was just the right dish to kick off the cool weather that is HOPEFULLY coming our way soon! It is a simple dish, and the meatballs can be easily made ahead of time and froze for later use! SCORE! Swedish Meatballs with Mushroom Cream Sauce

Ingredients
  • Meatballs:
  • 2 lbs Ground Beef
  • 1/2 Cup Bread Crumbs
  • 2 eggs
  • 1/4 tsp Allspice
  • Salt and Pepper to taste
  • Gravy:
  • 1/4 Cup Unsalted Butter
  • 1/2 Cup Mushrooms cleaned and sliced
  • 3 Cups Beef Broth
  • 1/2 Cup Plain Greek Yogurt can substitute for sour cream
  • 1/4 Cup all-purpose flour
  • 1 Clove Garlic minced
  • 1 Small Yellow Onion Diced
  • Salt and Pepper to taste

Instructions
  1. Meatballs:
  2. Preheat oven to 350 degrees.
  3. In a mixing bowl, combine all ingredients for the meatballs until well combined.
  4. Roll into 1 inch balls and place in a lined baking dish.
  5. Bake for 25 minutes, turning occasionally to brown all sides.
  6. Gravy:
  7. In a heavy bottom skillet, melt butter and sauté garlic, onions and mushrooms until onions are translucent.
  8. Gradually add in flour, whisking constantly.
  9. Add in beef broth and continue to whisk until well combined. Allow to simmer for 3-5 minutes, stirring occasionally.
  10. Whisk in greek yogurt and add salt and pepper to taste.
