Monster Meatloaf! Halloween Food!  

What is better than meatloaf? How about Monster Meatloaf covered in BACON! Serve it over a bed of maggots and you have a creepy good meal that the whole family will enjoy!

Monster Meatloaf! Halloween Food!
Course Halloween Food
Prep Time 15 minutes
Cook Time 60 minutes
Servings
Ingredients
  • 2 lb Ground Beef
  • 5-6 Pieces of Bacon
  • 1 Cheese Stick
  • 1 Small Yellow Onion Chopped
  • 1 tsp garlic Chopped
  • 2 tsp Coconut Oil or any other cooking oil you have on hand
  • 2 eggs
  • 2 tsp Worcestershire Sauce
  • 2 tsp Dijon Mustard
  • 2/3 Cup Bread Crumbs
Course Halloween Food
Prep Time 15 minutes
Cook Time 60 minutes

Ingredients
  • 2 lb Ground Beef
  • 5-6 Pieces of Bacon
  • 1 Cheese Stick

  • 1 tsp garlic Chopped
  • 2 tsp Coconut Oil or any other cooking oil you have on hand
  • 2 eggs
  • 2 tsp Worcestershire Sauce
  • 2 tsp Dijon Mustard
  • 2/3 Cup Bread Crumbs
Instructions
  1. In a small pan sauté onions and garlic until onions are translucent. Set aside to cool.
  2. In a large mixing bowl, combine ground beef, cooled onions and garlic, eggs, Worcestershire sauce, Dijon Mustard and bread crumbs. Mix together until well combined.
  3. Transfer to a lined 9x13 baking dish and create your monster. (see video below)
  4. Bake, uncovered for 1 hour at 350 degrees or until the internal temperature reaches 160 degrees.

Can you believe that it is June already? That means summer barbecues and pool parties are here! It also means that the 4th of July is right around the corner! There is just something I find magical about the 4th of July, the fireworks, the food and the great time spent with family. I remember running around catching fire flies while waiting for the big show to begin and I love that I get to pass this on to my children. Since my family is a little obsessed with chocolate, I decided that I was going to whip up a batch of Patriotic Chex Mix for them to start the celebration early. It is super easy to make, and a big hit in our house. Even The Hubby who does not like white chocolate gobbles this stuff up!

Patriotic Chex Mix

Ingredients
  • Red:
  • 4 Cups Chex Cereal
  • 1 Cup Red Candy Wafers
  • 2 tbsp Coconut Oil
  • 1/3 Cup Confectioners Sugar
  • Blue:
  • 4 Cups Chex Cereal
  • 1 Cup Blue Candy Wafers
  • 2 tbsp Coconut Oil
  • 1/3 Cup Confectioners Sugar
  • White:
  • 4 Cups Chex Cereal
  • 1 Cup White Candy Wafers
  • 2 tbsp Coconut Oil
  • 1/3 Cup Confectioners Sugar
  • White and Blue M&M's
Prep Time 5 minutes
Cook Time 5 minutes

Ingredients
  • Red:
  • 4 Cups Chex Cereal
  • 1 Cup Red Candy Wafers
  • 2 tbsp Coconut Oil
  • 1/3 Cup Confectioners Sugar
  • Blue:
  • 4 Cups Chex Cereal
  • 1 Cup Blue Candy Wafers
  • 2 tbsp Coconut Oil
  • 1/3 Cup Confectioners Sugar
  • White:
  • 4 Cups Chex Cereal
  • 1 Cup White Candy Wafers
  • 2 tbsp Coconut Oil
  • 1/3 Cup Confectioners Sugar
  • White and Blue M&M's
Instructions
  1. You will repeat these steps for each color:
  2. Microwave candy wafers in a microwave safe bowl for 15 second bursts and stir in between each burst until chocolate is completely melted.
  3. Stir in coconut oil and then gently fold in Chex Cereal until completely coated.
  4. Turn out mix onto a lined baking sheet and allow to cool completely.
  5. Dust with confectioners sugar.
  6. Combine all the colors together and add in M&M's.

Peanut Butter Chocolate Muffin Bites! Gluten Free and Dairy Free!

I have mentioned in a previous post that breakfast time is always hectic in our house. Children running around, husband rushing out the door, dogs barking, it is like a mad house. I strive to make easy breakfast food that is also easy to eat on the go and these Peanut Butter Chocolate Muffin Bites are just that. Plus, they are gluten free and dairy free, so everyone is happy in house! Just a heads up, I did use my awesome cake pop maker to make them (which I LOVE), but you can use a mini muffin tin or even a cupcake tin. I have included the directions for all three! Drizzle some chocolate syrup over the top and it even makes for a great healthy dessert!

  • 1/2 Cup Coconut Oil
  • 1/2 Cup Honey
  • 1/2 Cup Cup Cocoa Powder
  • 3/4 Cup Peanut Butter Crunchy or Smooth, your choice
  • 4 eggs
  • 1/2 tsp Baking Soda
  • Chocolate Chips optional
Cuisine Breakfast
Prep Time 5 minutes
Cook Time 4 minutes

Cake Pops
Ingredients
  • 1/2 Cup Coconut Oil
  • 1/2 Cup Honey

  3. Fill the cake pop maker and bake for 4 minutes or until a toothpick inserted into the center comes out clean.
  4. Mini Muffin Tin:
  5. Preheat oven to 350 degrees.
  6. Grease or line muffin tin and fill halfway, bake for 8-10 minutes or until a toothpick inserted into the center comes out clean.
  7. Cupcake Tin:
  8. Preheat oven to 350 degrees.
  9. Grease or line Cupcake tin and fill halfway, bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
