I have been a dip and salsa kick lately. It has to be the warm weather, drawing me into the summer fun and hopes of wearing flip flops on the beach. Even though I can’t get to the beach, does not mean that I can’t celebrate summer a little early, right? This Guacomole Salsa will get you into the summer mood! A combination of thick and creamy Guacamole with a hint of salsa, your friends and family are sure to be begging you for this recipe! Guacamole Salsa With just a few simple ingredients, the only tool you will need for this recipe is a blender or food processor! Guacamole Salsa If you like your salsa or guacamole with a little kick, you can add more jalapeƱos, or none at all, it is up to you! Guacamole Salsa I like dips and salsas because I have some picky eaters in my house. But, if they have something they can dip their food into it, they seem to eat everything on their plate. I guess they like the idea of “playing” with their food, which they probably got from me. Taquitos and Tacos are the perfect dipping tool for thisĀ Guacamole Salsa! You can find a ton of different options in beef or chicken at Walmart! I am loving the Beef and Cheese Tacos from Delimex! Ingredients
  • 1 lb. tomatillos
  • 1 jalapeno pepper
  • 1/3 cup fresh cilantro
  • 1/3 cup onion
  • 1 garlic clove
  • 1 avocado
  • 1 tsp. salt
Course Salsa
Prep Time 5 minutes
Cook Time 5 minutes
Servings
Ingredients
  • 1 lb. tomatillos
  • 1 jalapeno pepper
  • 1/3 cup fresh cilantro
  • 1/3 cup onion
  • 1 garlic clove
  • 1 avocado
  • 1 tsp. salt
Guacamole Salsa
Instructions
  1. Place everything into a blender of food processor.
  2. Pulse until fully combined and desired consistency is reached.
  3. Store leftovers in an airtight container in the refrigerator for up to 1 week.

Something about Salsa just screams summer to me! With the weather in the 80’s, it might as well all ready be summer. Everything is blooming, and I will soon have tons of fresh strawberries, blueberries and blackberries. Although none of my veggies in the garden have produced, the farmers market down the street has some nice fresh veggies already!

  • 1 lb tomatoes
  • 1/4 cup white onion
  • 2 Jalapenos optional (remove the seeds if you want less heat)
  • 1 garlic clove peeled
  • 2 teaspoons of cumin
  • 1 cup of fresh cilantro
  • 1 1/2 teaspoons of kosher salt

  • 1/4 cup white onion

What a crazy week this has been! Let me start by saying, I moved away from Michigan because I hated the winters. Now, here in North Carolina we have ice and snow and the temperature is dropping to the single digits this week…. SINGLE digits! I think it may be time to move further south… Since everything has shut down (which I find funny), I was in a bind on what to make for dinner. After raiding the pantry and fridge I committed to making a super yummyĀ Chicken Carbonara Recipe! Nothing cheers me up like dinner that includes bacon! Bacon fixes everything, in my opinion… and chocolate… chocolate too! Chicken Carbonara Recipe! This recipe is super easy to make, and great for if you have any left over chicken from a previous meal… If not, it is still easy to make. And did I mention bacon?

  • 2 lbs chicken diced and cooked (I like to use a combination of white and dark meat)
  • 7 ounces of cooked spaghetti
  • 8 slices bacon cut into 1/2-inch pieces
  • 1/2 cup diced onion
  • 1 garlic clove finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup whipping cream heavy
  • Salt and Pepper to taste

Cook Time 15 minutes

Chicken Carbonara Recipe!
Instructions
  1. In a 3-quart saucepan cook bacon over low heat 8 to 10 minutes, stirring frequently, until crisp and golden.
  2. Remove bacon from saucepan and drain excess drippings from the saucepan, reserving 1 tbsp.
  3. Cook onion and garlic in bacon fat over medium heat about 3 minutes, stirring frequently, unitl onions become opaque. Stir in spaghetti, chicken, cheese and whipping cream. Cook, stirring occasionally, until heated through.
  4. Toss in bacon and serve!

5 Cheese Baked Macaroni and Cheese

I must start off with a warning. If you are on a diet, slowly back away, or stay and lick the screen until your heart is content! I won’t judge… I swear! Ever just have one of those days that you had no idea what to make for dinner? Yesterday was that for me, and sometimes I throw together something not so great, and others become new family favorites. This Macaroni and Cheese is now a family favorite. Who knew by throwing in some butter, bacon grease, flour, cream and every last bit of cheese in your house could create something so mouthwatering? I may try doing that more often!

5 Cheese Baked Macaroni and Cheese

Ingredients
  • 1 package macaroni cooked al dente, 8 ounce
  • 3 tablespoons butter
  • 1 tablespoon bacon grease (if none on hand substitute with anotherbutter)
  • 4 tablespoons flour
  • 1 cup milk
  • 1 cup cream
  • 1/2 teaspoon salt
  • fresh ground black pepper to taste
  • 1 cup cheddar cheese shredded
  • 1/2 cup gruyere cheese shredded
  • 1/2 cup munster cheese shredded
  • 3 tablespoons mascarpone cheese you can substitute with cream cheese
  • 1 garlic clove minced
  • Salt to taste
  • Topping:
  • 1/4 cup breadcrumbs buttered
  • 1/4 cup Parmesan cheese
Prep Time 15 minutes
Cook Time 20 minutes

  • 1 package macaroni cooked al dente, 8 ounce
  • 3 tablespoons butter
  • 1 tablespoon bacon grease (if none on hand substitute with anotherbutter)
  • 4 tablespoons flour
  • 1 cup milk
  • 1 cup cream
  • 1/2 teaspoon salt
  • fresh ground black pepper to taste
  • 1 cup cheddar cheese shredded

  • Topping:

Instructions
  1. Preheat oven to 400 degrees.
  2. Cook and drain pasta according to package directions and set aside.
  3. In a large pot melt butter and bacon grease. Add in garlic and cook on medium for 1 minute. Add in flour and salt and whisk until well combined.
  4. Gradually whisk in milk and cream and bring to a boil. Boil for 1 minute then reduce heat to low.
  5. Add in cheddar, gruyere, munster and mascarpone cheese and stir until melted.
  6. Remove from heat and combine cheese mixture with cooked pasta. Stir to coat the pasta.
  7. Transfer to a greased 9x12 baking dish.
  8. Combine breadcrumbs and parmesan cheese and sprinkle over the top.
  9. Bake for 20 minutes or until golden brown.
