Monster Meatloaf! Halloween Food!  

What is better than meatloaf? How about Monster Meatloaf covered in BACON! Serve it over a bed of maggots and you have a creepy good meal that the whole family will enjoy!

Course Halloween Food
Prep Time 15 minutes
Cook Time 60 minutes
Servings
Ingredients
  • 2 lb Ground Beef
  • 5-6 Pieces of Bacon
  • 1 Cheese Stick
  • 1 Small Yellow Onion Chopped
  • 1 tsp garlic Chopped
  • 2 tsp Coconut Oil or any other cooking oil you have on hand
  • 2 eggs
  • 2 tsp Worcestershire Sauce
  • 2 tsp Dijon Mustard
  • 2/3 Cup Bread Crumbs
Course Halloween Food
Prep Time 15 minutes
Cook Time 60 minutes

Ingredients
  • 2 lb Ground Beef
  • 5-6 Pieces of Bacon
  • 1 Cheese Stick

  • 1 tsp garlic Chopped

  • 2 tsp Worcestershire Sauce

Instructions
  1. In a small pan sauté onions and garlic until onions are translucent. Set aside to cool.
  2. In a large mixing bowl, combine ground beef, cooled onions and garlic, eggs, Worcestershire sauce, Dijon Mustard and bread crumbs. Mix together until well combined.
  3. Transfer to a lined 9x13 baking dish and create your monster. (see video below)
  4. Bake, uncovered for 1 hour at 350 degrees or until the internal temperature reaches 160 degrees.

Garlic Lemon and Butter Shrimp!

I have been totally MIA this past week. The girl brought home a horrible bug and incubated it so that she could release it to the rest of the family. I was the first victim. I still have a horrible cough, but I am at least able to walk from one room to another without falling on my face. To celebrate my balance, I made this super easy and very yummy Garlic Lemon and Butter Shrimp! I do not know what it is about this time of year, but once the weather warms up, all I want is sea food. Shrimp has been on my mind since I got sick, and I have been dying make it! This recipe is super simple, and because it is shrimp, it only takes a few minutes!

  • 2 lbs Raw Shrimp
  • 1 Cup Rice Cooked
  • 4 tbsp butter
  • Juice of 1 Lemon
  • 2 tbsp garlic Minced
  • 2 tbsp Parsley Minced
Course Dinner

Prep Time 5 minutes
Cook Time 10 minutes

  • 2 lbs Raw Shrimp
  • 1 Cup Rice Cooked
  • 4 tbsp butter
  • Juice of 1 Lemon
  • 2 tbsp garlic Minced
  • 2 tbsp Parsley Minced
Instructions
  1. In a skillet over medium heat, melt butter and add garlic. Cook garlic for 1 minute or until fragrant.
  2. Add in shrimp and cook for 4-5 minutes on each side. Add in lemon juice and cook for 1 additional minute.
  3. Toss in cooked rice and toss until rice is warmed through.
  4. Sprinkle with parsley and serve!

Slow Cooker Sriracha Pork Tenderloin

Oh how I love my slow cooker, I use it year round! I love it during the summer because I can pop something in it and then go and play out in the garden without having to worry about it. The hubby is a certified Sriracha addict, so anytime I can incorporate it into a meal, he is a happy camper. So, this slow cooker sriracha pork tenderloin is a winner in both of our books! Spicy, with a little hint of sweet that that even the kiddos love!

  • 1 Pork Tenderloin
  • 1/4 cup brown sugar
  • 1/3 cup Sriracha
  • 3 tbsp olive oil
  • 2 tbsp garlic minced
  • 1/3 c of water

  • 1 Pork Tenderloin
  • 1/4 cup brown sugar
  • 1/3 cup Sriracha
  • 3 tbsp olive oil
  • 2 tbsp garlic minced

Instructions
  1. Coat bottom of slow cooker with olive oil and place pork tenderloin in slow cooker.
  2. Combine brown sugar, sriracha, garlic and water and pour over tenderloin.
  3. Cook on low for 6-8 hours.
