I love Chicken Cordon Bleu, but absolutely hate the work that goes into making them. Call me lazy, but I want the flavor of it, without all of the work. That is why I love this Chicken Cordon Bleu Casserole recipe, the yummy flavor without all of the hassle. Since I have a ton of ham leftover from another dinner, I decided this would be the perfect meal to use up those leftovers. Plus, I have a ton of Zaycon chicken left in my freezer, so I kill two birds with one stone. You can use leftover ham, or left over chicken, or both or neither. All you need to do is cut up some chicken breast, or if using left over chicken, shred it…. Chicken Cordon Bleu Casserole Cover the chicken up in some yummy ham…. Chicken Cordon Bleu Casserole Baking times will differ depending on if you are using raw chicken verses leftover chicken, but the results are the same. A juicy chicken with a creamy and cheesy sauce. Another note is you want to be mindful of the amount of salt you use. If your ham is rather salty on its own, you will not want to add as much salt to the sauce. Chicken Cordon Bleu Casserole! Ingredients
  • 4-5 large boneless skinless chicken breast, cut into bite size peices
  • 1 cup ham chopped
  • 1/2 cup shredded Swiss cheese
  • For the sauce:
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 3 1/4 cups milk
  • 1 tablespoon Dijon Mustard
  • 1/4 teaspoon pepper
  • salt to taste
  • For the topping:
  • 6 tbsp Unsalted Butter
  • 1 1/2 cups Bread Crumbs
  • Salt and Pepper to taste

Prep Time 10 minutes
Cook Time 45 minutes

Instructions
  1. Preheat oven to 350 degrees and grease or butter a 9- x 13-inch baking dish. Set aside.
  2. Layer the chicken on the bottom of the dish and cover with ham and then cheese.
  3. Sauce:
  4. In a large sauce pan over medium heat, melt butter completely.
  5. Add in flour and whisk until smooth. Do not over cook, if the roux is starting to darken, remove from heat.
  6. Add in milk and continue to whisk until sauce is smooth. Stir in dijon mustard, salt and pepper and bring to a boil and then remove from heat.
  7. Pour sauce over the casserole, ensuring it gets into the corners and covers the entire bottom the dish.
  8. Topping:
  9. Melt butter over medium heat and stir in bread crumbs and salt and pepper.
  10. Sprinkle over the casserole until completely covered.
  11. Bake, uncovered, for 45 minutes or the internal temperature of the chicken reaches 165 degrees
  12. Allow to cool for 5 minutes before serving.

What a crazy week this has been! Let me start by saying, I moved away from Michigan because I hated the winters. Now, here in North Carolina we have ice and snow and the temperature is dropping to the single digits this week…. SINGLE digits! I think it may be time to move further south… Since everything has shut down (which I find funny), I was in a bind on what to make for dinner. After raiding the pantry and fridge I committed to making a super yummy Chicken Carbonara Recipe! Nothing cheers me up like dinner that includes bacon! Bacon fixes everything, in my opinion… and chocolate… chocolate too! Chicken Carbonara Recipe! This recipe is super easy to make, and great for if you have any left over chicken from a previous meal… If not, it is still easy to make. And did I mention bacon?

  • 2 lbs chicken diced and cooked (I like to use a combination of white and dark meat)
  • 7 ounces of cooked spaghetti
  • 8 slices bacon cut into 1/2-inch pieces
  • 1/2 cup diced onion
  • 1 garlic clove finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup whipping cream heavy
  • Salt and Pepper to taste

Cook Time 15 minutes

Instructions
  1. In a 3-quart saucepan cook bacon over low heat 8 to 10 minutes, stirring frequently, until crisp and golden.
  2. Remove bacon from saucepan and drain excess drippings from the saucepan, reserving 1 tbsp.
  3. Cook onion and garlic in bacon fat over medium heat about 3 minutes, stirring frequently, unitl onions become opaque. Stir in spaghetti, chicken, cheese and whipping cream. Cook, stirring occasionally, until heated through.
  4. Toss in bacon and serve!

WOW! Where did summer go? If you haven’t noticed, I have been a bit MIA these past few weeks (if you haven’t noticed, it’s ok, I still love you). I have been super busy with getting the kiddos ready for school, and we were actually able to go on a mini vacation, but that is another post. The temperatures are still in the high 90’s here in North Carolina, but I have fall and winter on the mind. I am sick of the heat to tell you the truth. This Swedish Meatballs with Mushroom Cream Sauce was just the right dish to kick off the cool weather that is HOPEFULLY coming our way soon! It is a simple dish, and the meatballs can be easily made ahead of time and froze for later use! SCORE! Swedish Meatballs with Mushroom Cream Sauce

  • Meatballs:
  • 2 lbs Ground Beef
  • 1/2 Cup Bread Crumbs
  • 2 eggs
  • 1/4 tsp Allspice
  • Salt and Pepper to taste
  • Gravy:
  • 1/4 Cup Unsalted Butter
  • 1/2 Cup Mushrooms cleaned and sliced
  • 3 Cups Beef Broth
  • 1/2 Cup Plain Greek Yogurt can substitute for sour cream
  • 1/4 Cup all-purpose flour
  • 1 Clove Garlic minced
  • 1 Small Yellow Onion Diced
  • Salt and Pepper to taste
Course Dinner
Prep Time 15 minutes
Cook Time 25 minutes

  3. In a mixing bowl, combine all ingredients for the meatballs until well combined.
  4. Roll into 1 inch balls and place in a lined baking dish.
  5. Bake for 25 minutes, turning occasionally to brown all sides.
  6. Gravy:
  7. In a heavy bottom skillet, melt butter and sauté garlic, onions and mushrooms until onions are translucent.
  8. Gradually add in flour, whisking constantly.
  9. Add in beef broth and continue to whisk until well combined. Allow to simmer for 3-5 minutes, stirring occasionally.
  10. Whisk in greek yogurt and add salt and pepper to taste.
