  • 1 Stick of Unsalted Butter 1/2 Cup
  • 1 Cup brown sugar
  • 1/4 Cup Corn Syrup
  • 1 tsp salt
  • 1/4 tsp Baking Soda
  • 1/2 tsp vanilla extract
  • 8 Cups Popped Popcorn
  • Green Food Coloring
Prep Time 10 minutes
Cook Time 60 minutes

Ingredients
  • 1 Stick of Unsalted Butter 1/2 Cup
  • 1 Cup brown sugar
  • 1/4 Cup Corn Syrup
  • 1 tsp salt
  • 1/4 tsp Baking Soda
  • 1/2 tsp vanilla extract
  • 8 Cups Popped Popcorn
  • Green Food Coloring
Instructions
  1. Preheat oven to 300 degrees.
  2. In a large sauce pan melt butter over medium heat. Once butter has melted, stir in brown sugar and corn syrup. Increase heat to medium high and continue to stir until sugar has melted.
  3. Once sugar has melted allow to come to a boil and boil for 5 minutes.
  4. Remove from heat and add in salt, baking soda, vanilla extract and green food coloring.
  5. Add in popcorn and toss until lightly coated. Transfer to a lined cookie or baking sheet and bake for 5 minutes. After 5 minutes toss popcorn around and bake for an additional 5 minutes. Continue this process 1 more time until popcorn is completely coated.
  6. Transfer to a clean baking sheet lined with wax paper and allow to cool for 1 hour. Break up into pieces and serve!

Go figure, it has been cold and rainy here for 12 days straight… TWELVE DAYS! So of course that means it is chili weather and this Extra Chunky Chili Recipe is both filling and yummy! Of course, I made it and now it is sunny and warm, but I am not complaining!   Extra Chunky Chili Recipe! I like a hearty chili, the kind you can eat with a fork. I could just never get on board with a soupy chili, that is not chili…it’s soup! There is just enough liquid for the Oyster crackers to sop up…. Anyone else love Oyster crackers as much as I do? I could eat them straight out the bag…yum! Extra Chunky Chili Recipe! You can add as much heat to this recipe as you want, I like mine with a little kick. If you like a more mild heat, don’t add as much jalapeno. You can also throw this into a slow cooker and let it simmer all day!

  3. The longer you let simmer, the better this recipe gets!
  4. Top with your favorite chili add ons like cheese, onion... or of course, Oyster crackers.

I love Chicken Cordon Bleu, but absolutely hate the work that goes into making them. Call me lazy, but I want the flavor of it, without all of the work. That is why I love this Chicken Cordon Bleu Casserole recipe, the yummy flavor without all of the hassle. Since I have a ton of ham leftover from another dinner, I decided this would be the perfect meal to use up those leftovers. Plus, I have a ton of Zaycon chicken left in my freezer, so I kill two birds with one stone. You can use leftover ham, or left over chicken, or both or neither. All you need to do is cut up some chicken breast, or if using left over chicken, shred it…. Chicken Cordon Bleu Casserole Cover the chicken up in some yummy ham…. Chicken Cordon Bleu Casserole Cover up the ham in some shredded swiss cheese, or you can use sliced if you prefer…. Chicken Cordon Bleu Casserole Create a quick béchamel sauce, which sounds fancy, but is really easy and pour it on…. Chicken Cordon Bleu Casserole Then, finally top with a bread crumb topping and bake! Chicken Cordon Bleu Casserole Baking times will differ depending on if you are using raw chicken verses leftover chicken, but the results are the same. A juicy chicken with a creamy and cheesy sauce. Another note is you want to be mindful of the amount of salt you use. If your ham is rather salty on its own, you will not want to add as much salt to the sauce. Chicken Cordon Bleu Casserole! Instructions
  1. Preheat oven to 350 degrees and grease or butter a 9- x 13-inch baking dish. Set aside.
  2. Layer the chicken on the bottom of the dish and cover with ham and then cheese.
  3. Sauce:
  4. In a large sauce pan over medium heat, melt butter completely.
  5. Add in flour and whisk until smooth. Do not over cook, if the roux is starting to darken, remove from heat.
  6. Add in milk and continue to whisk until sauce is smooth. Stir in dijon mustard, salt and pepper and bring to a boil and then remove from heat.
  7. Pour sauce over the casserole, ensuring it gets into the corners and covers the entire bottom the dish.
  8. Topping:
  9. Melt butter over medium heat and stir in bread crumbs and salt and pepper.
  10. Sprinkle over the casserole until completely covered.
  11. Bake, uncovered, for 45 minutes or the internal temperature of the chicken reaches 165 degrees
  12. Allow to cool for 5 minutes before serving.

It is the Holiday season, which means that my hubby has work pot lucks all this week. It NEVER fails, I always get the assignment of making cheesecake…Every…Single…Time. Hubby said after this las lunch, there were tons of cheesecake left on the table, except mine. This cheesecake (as well as a few others I made) were gone within minutes. His coworkers refer to me as the “Cheesecake Lady”…lol To make these already yummy bars even better, I drizzled them with both a chocolate and a peanut butter ganache! Peanut Butter Cheesecake Bars with Brownie Crust! This year, I wanted to give them some varity, so I made these yummy Peanut Butter Cheesecake Bars with a brownie crust, and a also made a chocolate version as well. The Chocolate Cheesecake bars will be posted next week. No need for a cheesecake overload. I prefer to make cheesecake bars because they do not take forever to bake, and I do not have to water bathe them while baking, which is a total plus, since I only had 24 hour notice to make 60+ servings. Peanut Butter Cheesecake Bars with Brownie Crust!

  • Brownie Bottom:
  • 1 stick unsalted butter melted
  • 1 cup granulated sugar
  • 1 cup unsweetened natural cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 2 Large Eggs
  • 1/2 cup all-purpose flour
  • Filling:
  • 2 packages cream cheese at room temperature, 8-ounce
  • 1/3 cup light brown sugar
  • 2 Large Eggs at room temperature
  • 1/2 cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • Topping:
  • 1/4 cup heavy cream divided
  • 1/4 cup semisweet chocolate chips
  • 1/4 cup peanut butter chips

  • Brownie Bottom:
  • 1 stick unsalted butter melted
  • 1 cup granulated sugar
  • 1 cup unsweetened natural cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 2 Large Eggs
  • 1/2 cup all-purpose flour
  • Filling:
  • 2 packages cream cheese at room temperature, 8-ounce
  • 1/3 cup light brown sugar
  • 2 Large Eggs at room temperature
  • 1/2 cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • Topping:
  • 1/4 cup heavy cream divided
  • 1/4 cup semisweet chocolate chips
  • 1/4 cup peanut butter chips
Instructions
  1. Brownie Bottom:
  2. Preheat over to 350 degrees and line an 8x8 inch cake pan with parchment paper so that the edges overlap over the sides.
  3. In a large bowl combine butter, sugar, cocoa powder, and salt. Mix until well combined. Stir in the vanilla and then the eggs, one at a time, mixing very well after each addition. Add the flour and mix until combined. Spread into prepared pan and bake for 15 minutes.
  4. Brownies should be slightly set, but not fully baked. Set aside to cool.
  5. Filling:
  6. (8-ounce) packages cream cheese, softened
  7. /3 cup light brown sugar
  8. large eggs, room temperature
  9. /2 cup smooth peanut butter
  10. teaspoon vanilla extract
  11. /8 teaspoon salt
  12. Using a hand or stand mixer, beat cream cheese and sugar on medium-high speed until well combined and smooth. Beat in the eggs, one at a time, until combined. Add in the peanut butter, vanilla, and salt and beat until just combined. Pour over the cooled brownie crust.
  13. Bake at 350 degrees for 30 minutes. Filling should be set around the edges and slightly jiggly in the center. Allow to cool at room temperature on a cooling rack for 1 hour and then refrigerate to chill through.
  14. Topping:
  15. Heat whipping cream until it comes to a low boil. Place chocolate and peanut butter chips into two separate bowls and pour equal parts of the whipping cream into each bowl. Allow to set for 1 minute to melt chips.
  16. Mix each bowl until each is well combined, allow to set for 5 minutes to thicken. Drizzle over cooled cheesecake

Can you believe that Halloween is right around the corner? I love Halloween, and everything about it, and will actually be sad once it is over! The creepy food and fun costumes are things I look forward to all year long. Plus, it is just another reminder that Christmas is looming… I love Christmas, don’t get me wrong, but the crowded stores and all of the glitter are things I am just not looking forward to. Spider Chip Cookies!   This year, create a quick and easy creepy treat for your friends and family with these simple spider chip cookies. Your guests will be sure to do a double take when reaching for these delectable treats.  You have two options for these cookies, you can make them from scratch (there is a recipe down below), or you can simply purchase some frozen cookie dough if you are on a time crunch.

  • 3/4 cup packed brown sugar
  • 1 cup butter softened

  • 1 egg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon salt
  • 2 Cups semisweet chocolate chips
  • Decorations:
  • 1/4 Cup semisweet chocolate chips melted
  • Black and Red Glitter Gel optional
Prep Time 10 minutes
Cook Time 10 minutes

Ingredients
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 cup butter softened
  • 1 teaspoon vanilla
  • 1 egg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon salt
  • 2 Cups semisweet chocolate chips
  • Decorations:
  • 1/4 Cup semisweet chocolate chips melted
  • Black and Red Glitter Gel optional
Instructions
  1. Preheat oven to 375ºF.
  2. Combine sugars, butter, vanilla and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Fold in chocolate chips.
  3. Drop dough by rounded tablespoonfuls about 2 inches apart onto lined cookie sheet.
  4. Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.
  5. To decorate see video for instructions!
