Can you believe that it is officially Spring already? In my own, Spring time is probably the most hectic time of year. With sports, school, work, and getting the garden ready, it feels like I never get a chance to rest. Dinner has to be something quick and easy because of all of the crazy schedules, and anything that only requires one pot to cook in is my favorite time saver. This One Pot Jambalaya Recipe fits everything that we need. It is quick, easy, and yummy! I can throw everything into a pot and serve. Lately I have been obsessed with the Green Giant Riced Veggies, and this recipe is perfect with it. The new Riced Veggies are made with 100% vegetables, so it has 70% less calories than traditional rice. I also like that there are no sauces included, so I can really make it fit any meal. You can find them in the frozen vegetable aisle at your local Walmart. I can not wait to try out the Veggie Tots! I also love that they have a mix that includes Sweet Potatoes, since they are latest food obsession. This recipe includes sausage, shrimp, and chicken. If you do not like super spicy, you can always scale back on the seasoning. I like a little kick to my food, so I always go over board with it.
