Easy Rainbow Cheesecake!
Do you smell that? It is starting to smell like spring, at least here in the south. The weather is starting to warm up and I can not wait to start getting outside more. With the celebration of Spring I decided to share this super easy Rainbow Cheesecake! The recipe calls for minimal ingredients and it is no bake! Now, I love cheesecake, my go to recipe is my Peanut Butter Cheesecake Recipe, but since I wanted something fun and festive (and did not want to bake), I decided to go with a rainbow theme no bake cheesecake. Who doesn’t love rainbows? Whip this recipe up in a few minutes and you are ready to serve!
You do not have to go with a rainbow cheesecake, you can make it any color you want. Have a favorite sports team? Use their colors to brighten up your dessert!

- 16 oz cream cheese Softened
- 8 oz Cool Whip
- 1 Cup Sugar
- 1/4 Cup Powdered Sugar
- Food Coloring
Ingredients

- Combine cream cheese, Cool Whip, sugar and powdered sugar into a large mixing bowl.
- Mix on medium speed until well combined and there are no lumps.
- Separate batter into equal portions (based off of how many colors you are using).
- Add food coloring to each portion and mix until color is even.
- Transfer into piping bags or zip lock bags and pipe into individual containers.
- Refrigerate until ready to serve.
- Top with extra whip cream and sprinkles!
